Enjoy bold and cheesy flavors with this Easy Taco Bell Chicken Quesadillas recipe. Made with seasoned chicken breast and melted plant-based cheese, these crispy quesadillas come together quickly using simple, everyday ingredients. Perfect for a flavorful homemade meal that is customizable and ready in under 30 minutes.

Ingredients

Scale

Protein and Cheese

  • 1 lb chicken breast, skinless and boneless, shredded or diced
  • 1 1/2 cups shredded plant-based cheese (cheddar-style or mozzarella-style)

Seasonings and Sauces

  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp apple cider vinegar (natural)
  • Salt and black pepper, to taste

Other Ingredients

  • 4 large flour tortillas (or gluten-free tortillas)
  • 2 tbsp olive oil, divided

Instructions

  1. Prepare the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add diced chicken breast and sprinkle with smoked paprika, ground cumin, garlic powder, salt, and black pepper. Cook, stirring frequently, for 7 to 8 minutes until the chicken is cooked through and slightly golden. Drizzle vegetarian Worcestershire sauce (natural) and apple cider vinegar (natural) over the chicken and stir to coat evenly. Remove from heat and set aside.
  2. Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface. Sprinkle a generous handful of shredded plant-based cheese on one half of the tortilla. Add a layer of the seasoned chicken over the cheese, then sprinkle a little more cheese on top to help everything stick together. Fold the tortilla in half to cover the filling.
  3. Cook Until Crispy: Heat a large non-stick skillet over medium heat and lightly brush it with the remaining olive oil. Place the folded quesadilla on the skillet and cook for about 3 minutes on each side until the tortilla is golden brown and crispy and the cheese inside has melted. Press gently with a spatula to encourage even browning and filling fusion.
  4. Serve and Enjoy: Remove the quesadilla from the pan and let it rest for a minute. Cut into triangles using a sharp knife or pizza cutter. Serve warm with your choice of sides or dips such as mild salsa (natural), guacamole, or plant-based sour cream.

Notes

  • Use fresh tortillas for better crispness and easier folding.
  • Do not overfill the quesadillas to ensure even cooking and manageability.
  • Cook on medium heat to prevent burning while allowing the cheese to melt perfectly.
  • Press gently with a spatula while cooking for a compact, crispy finish.
  • Let quesadillas rest before cutting to allow the filling to settle.
