Description

Stuffing Stuffed Mushrooms are a flavorful and aromatic appetizer featuring juicy large mushroom caps filled with a savory blend of smoked turkey bacon, plant-based cheese, fresh herbs, and natural seasonings. This easy-to-make dish brings a comforting and rich taste perfect for any occasion, from casual gatherings to special events.

Ingredients

Scale

For the Mushrooms

  • 12 large mushroom caps, stems removed and chopped finely

For the Filling

  • 4 slices smoked turkey bacon, chopped
  • 1 cup plant-based cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/3 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the mushrooms: Gently clean the mushroom caps with a damp cloth to remove any dirt. Carefully remove and finely chop the stems to include in the stuffing, enhancing flavor and minimizing waste.
  2. Cook the filling: Heat olive oil in a skillet over medium heat. Add chopped smoked turkey bacon and cook until crisp. Stir in minced garlic and chopped mushroom stems, cooking until just softened. Mix in vegetarian Worcestershire sauce (natural), bread crumbs, chopped parsley, salt, and black pepper. Remove from heat and allow the mixture to cool slightly before folding in the grated plant-based cheese.
  3. Stuff the mushroom caps: Using a spoon, fill each mushroom cap generously with the cooked stuffing. Press gently to pack, being careful not to overfill to prevent spilling during baking.
  4. Bake to perfection: Preheat the oven to 375°F (190°C). Arrange stuffed mushrooms on a baking tray lined with parchment paper. Bake for 15-20 minutes, or until mushrooms are tender and the topping is golden and bubbling. Serve warm.

Notes

  • Choose firm, fresh mushroom caps for the best shape and flavor absorption.
  • Do not overfill the mushrooms to ensure even cooking and intact stuffing.
  • Use fresh herbs like parsley to brighten the filling and balance richness.
  • Optionally toast breadcrumbs lightly before mixing for a crunchier texture.
  • Allow stuffed mushrooms to rest for a few minutes after baking to meld flavors and ease serving.
  • Leftovers can be stored in an airtight container in the refrigerator up to 2 days.
  • Prepare and stuff mushrooms ahead of time and refrigerate until ready to bake.
  • Freeze unbaked stuffed mushrooms on a tray, then transfer to a freezer-safe container; bake directly from frozen with added cooking time.
  • Reheat covered in the oven at 350°F (175°C) for 10-15 minutes to avoid drying out.
