Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook your chosen pasta until al dente according to the package instructions. Reserve a cup of pasta water before draining to help loosen the sauce later if needed.
  2. Sauté the garlic and smoked turkey: In a large skillet, heat olive oil over medium heat and gently sauté the minced garlic until fragrant. Add the smoked turkey slices, chopped or torn into bite-sized pieces, and cook until warmed through and slightly crisped on the edges.
  3. Wilt the spinach: Add fresh spinach to the skillet, stirring frequently until it wilts down and softens beautifully, keeping its bright green color vibrant.
  4. Combine ricotta and seasonings: Lower the heat and mix in the plant-based ricotta, vegetarian Worcestershire sauce, apple cider vinegar, and fresh lemon juice. Stir gently to create a creamy sauce, adding reserved pasta water a little at a time to reach your desired consistency.
