It requires minimal cooking skills, uses wholesome ingredients, and is ideal for busy days or gatherings.

Ingredients

Scale

Pasta and Protein

  • 2 cups rotini pasta
  • 6 slices smoked turkey bacon

Vegetables and Beans

  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup sweet corn kernels, rinsed and drained
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, roughly chopped

Cheese and Garnishes

  • 1/2 cup plant-based cheese (creamy style), cubed

Dressing Ingredients

  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp apple cider vinegar (natural)
  • 3 tbsp olive oil (natural)
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • Salt and pepper, to taste
  • 1/2 tsp natural gelling agent (optional)

Instructions

  1. Cook the Pasta: Boil the rotini pasta according to package instructions until al dente. Drain well, rinse under cold water, and set aside to cool completely to maintain the perfect texture.
  2. Prepare the Turkey Bacon: Crisp the smoked turkey bacon in a skillet over medium heat until golden and crunchy. Chop into bite-sized pieces and allow to cool slightly before adding to the salad.
  3. Chop Fresh Vegetables: Dice the red bell pepper, halve the cherry tomatoes, rinse and drain black beans and corn kernels. Roughly chop cilantro for garnishing and mixing.
  4. Mix the Dressing: In a small bowl, whisk together vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), olive oil (natural), cumin, smoked paprika, chili powder, salt, pepper, and natural gelling agent if using. This creates a balanced dressing with tangy, smoky, and spicy notes.
  5. Combine Everything: In a large bowl, toss cooled pasta with turkey bacon pieces, chopped vegetables, black beans, corn, and plant-based cheese. Pour the dressing over and gently mix until evenly coated.
  6. Chill and Serve: Refrigerate the salad for at least 30 minutes to allow flavors to meld. Toss gently before serving to refresh textures.

Notes

  • Cook pasta al dente to keep a lively texture after mixing.
  • Ensure pasta and turkey bacon are fully cooled to prevent wilting vegetables.
  • Mix gently to avoid breaking apart plant-based cheese.
  • Adjust salt and spices after combining all ingredients to suit taste.
  • Prepare the salad one day ahead for enhanced flavor fusion.
