- Prepare the Dough: In a mixing bowl, combine the active sourdough starter, warm water, and all-purpose flour. Stir until a shaggy dough forms. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Cover and let rest for 4-6 hours or until it doubles in size.
- Shape the Bites: Once risen, gently punch down the dough and divide into equal small pieces. Roll each piece into a short rope and cut into 1-inch bite-sized pieces.
- Prepare the Baking Soda Bath: Bring a large pot of water to a boil, add baking soda and vegetarian Worcestershire sauce (natural). Drop the pretzel bites in batches into the boiling bath for about 30 seconds each, then remove with a slotted spoon.
- Bake to Perfection: Place the boiled bites on a parchment-lined baking sheet. Brush generously with melted plant-based butter and sprinkle with coarse salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden brown.
