Ingredients

- Gyoza wrappers
Filling
- Plant-based mince
- Cabbage (finely chopped)
- Green onions (finely sliced)
- Garlic (minced)
- Ginger (grated)
- Soy sauce (natural)
- Vegetarian Worcestershire sauce (natural)
- Sesame oil
- Natural gelling agent
Optional Variations
- Chili peppers or chili oil (for spicy twist)
- Shiitake and oyster mushrooms (sautéed for mixed mushroom filling)
- Shredded carrots, bamboo shoots, or bean sprouts (for vegetable packed)
- Fresh cilantro or basil (for herb infused)
- Plant-based cheese (plant-based) (for vegan cheese filling)
Instructions
- Prepare the Filling: Combine the plant-based mince, finely chopped cabbage, green onions, minced garlic, grated ginger, soy sauce (natural), vegetarian Worcestershire sauce (natural), sesame oil, and natural gelling agent in a bowl. Mix thoroughly until everything is well incorporated and holds together.
- Assemble the Gyoza: Place a small spoonful of the filling in the center of each gyoza wrapper. Moisten the edges with water, then fold the wrapper in half and pleat the edges securely, sealing the filling inside.
- The Smashed Cooking Technique: Heat a non-stick pan over medium heat and add a little oil. Arrange the gyoza in the pan flat-side down without overcrowding. Pour a little water around the dumplings and immediately press them gently with a spatula to “smash” them, flattening the bottoms for a crisp, golden crust.
- Cook Until Crispy and Tender: Cover the pan with a lid and allow the gyoza to steam for about 5 minutes until the water evaporates. Remove the lid and continue cooking until the bottom is crisp and golden brown. Serve hot.
Notes
- Use fresh gyoza wrappers for best texture and proper sealing.
- Do not overfill the wrappers to avoid bursting during cooking.
- Press gently but firmly when smashing to achieve a crispy bottom without breaking wrappers.
- Make gyoza similar in size for even cooking.
- Serve immediately while still crispy for best experience.
