Description

Slow Cooker Beef and Broccoli Ramen is a comforting, flavorful one-pot meal featuring tender slow-cooked beef in a rich savory broth with crisp broccoli and perfectly cooked ramen noodles. Easy to prepare and customizable, it’s perfect for a cozy dinner any day of the week.

Ingredients

Scale

Beef and Broth

  • 2 to 3 pounds beef chuck roast, trimmed of excess fat
  • 4 cups beef broth (natural)
  • 1/4 cup low-sodium soy sauce (natural)
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon brown sugar (natural)
  • 4 garlic cloves, minced
  • 1 tablespoon freshly grated ginger root
  • 1 teaspoon sesame oil (natural)

Vegetables and Noodles

  • 3 cups fresh broccoli florets
  • 4 ounces ramen noodles
  • 2 green onions, sliced for garnish

Additional Ingredients

  • 1/2 teaspoon natural gelling agent
  • Optional: 1/4 teaspoon chili flakes

Instructions

  1. Prepare the beef and broth: Trim any excess fat from the beef chuck roast, then place it in the slow cooker. Add beef broth, soy sauce, vegetarian Worcestershire sauce, brown sugar, minced garlic, grated ginger, and a splash of sesame oil. Gently stir to combine and ensure the beef is mostly submerged.
  2. Slow cook for tender beef: Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours until the beef is tender enough to shred easily with forks, creating a rich, meaty broth.
  3. Shred the beef and add broccoli: Remove the beef and shred finely. Add fresh broccoli florets to the broth and stir in the natural gelling agent to slightly thicken the broth. Return shredded beef to the slow cooker.
  4. Cook the ramen noodles: About 15 minutes before serving, add ramen noodles directly to the slow cooker. Cook until noodles are tender but still firm, soaking up the flavorful broth.
  5. Final seasoning and serve: Taste broth and adjust seasoning with extra soy sauce or sesame oil if needed. Ladle ramen into bowls, garnish with sliced green onions, and enjoy.

Notes

  • Choose beef chuck roast for optimal tenderness and flavor.
  • Lightly sauté garlic and ginger before adding to enhance aroma.
  • Add broccoli late in the cooking process to keep it crisp and vibrant.
  • Use fresh ramen noodles for faster cooking and better broth absorption.
  • Gradually stir in natural gelling agent to achieve ideal broth thickness without overpowering the taste.
