  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Mashed Potato Topping

  • 3 cups peeled and diced starchy potatoes (Russet or Yukon Gold)
  • 2 tbsp plant-based butter
  • 1/4 cup plant-based milk
  • Salt to taste

  • Additional plant-based butter for dotting on top

Instructions

  1. Prepare the Mashed Potato Topping: Boil peeled starchy potatoes until tender, about 15-20 minutes. Drain and mash with plant-based butter, plant-based milk, and a pinch of salt until smooth and fluffy. Set aside and keep warm.
  2. Cook the Smoked Turkey Bacon and Vegetables: Heat olive oil in a large skillet over medium heat. Add smoked turkey bacon and cook until crispy. Remove some bacon for garnish. To the same pan, add diced onion, minced garlic, carrots, and peas. Sauté until vegetables are softened and fragrant, about 5-7 minutes.
  3. Brown the Ground Meat: Add ground beef or lamb to the pan with the turkey bacon and vegetables. Cook, breaking up the meat, until fully browned and cooked through, about 8-10 minutes.
  4. Add Flavor and Thicken the Filling: Stir in vegetarian Worcestershire sauce (natural), apple cider vinegar, fresh thyme, parsley, salt, and pepper. Mix natural gelling agent with a splash of cold water and sprinkle into the filling. Let simmer for 3-5 minutes to thicken and meld the flavors.
  5. Assemble the Casserole: Transfer the meat and vegetable mixture into a baking dish and spread evenly. Top with the prepared mashed potatoes, smoothing the surface with a spatula. Dot with additional plant-based butter evenly across the top.
  6. Bake Until Golden and Bubbling: Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the mashed potato topping is golden brown and the edges are bubbling.
