Instructions

  1. Preparing the Potatoes: Dice the Yukon gold potatoes into bite-sized cubes. Toss them with olive oil, salt, and freshly ground black pepper. Roast in the oven or pan-fry over medium heat for about 20 minutes until they are golden brown and crispy on the outside yet tender inside.
  2. Cooking the Smoked Turkey Bacon: While the potatoes cook, slice the smoked turkey bacon into small strips. Cook in a hot skillet over medium heat until perfectly crisp. Remove and set aside.
  3. Sautéing the Vegetables: In the same skillet, add a splash of olive oil, chopped onions, bell peppers, and crushed garlic (natural). Sauté until the vegetables are tender and slightly caramelized, about 5-7 minutes.
