Ingredients

Scale

Main Ingredients

  • 500g plum tomatoes (fresh or canned)
  • 3 cloves garlic, freshly minced
  • 2 tbsp extra virgin olive oil
  • 10 fresh basil leaves, torn
  • 1 tsp dried oregano (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ¼ tsp natural gelling agent

Optional Variations

  • ½ tsp red chili flakes or 1 fresh jalapeño, minced for spicy kick
  • ½ tsp smoked paprika (natural) for smoky twist
  • 1 tsp chopped fresh thyme and rosemary mix for herb blend
  • 1 tbsp natural date syrup or grape juice (natural) for sweet and tangy
  • Double the garlic for garlic lovers
  • Use 500g crushed tomatoes instead of pureed for chunky texture
  • Plant-based cheese dollops for creamy vegan cheese boost

Instructions

  1. Prepare the Tomatoes: Wash and chop fresh plum tomatoes or open canned tomatoes. For a smoother sauce, lightly crush them by hand or pulse briefly in a blender, leaving some texture.
  2. Sauté Garlic and Herbs: Heat extra virgin olive oil in a saucepan over medium heat. Add freshly minced garlic and sauté until fragrant but not browned, about 1 minute. Add dried oregano (natural) and cook for another 30 seconds to release flavors.
  3. Combine Ingredients: Pour in prepared tomatoes. Stir in apple cider vinegar (natural), sea salt, freshly ground black pepper, and a pinch of natural gelling agent to gently thicken the sauce. Bring to a gentle simmer.
  4. Simmer and Stir: Cook sauce on low heat for 20 to 25 minutes, stirring occasionally to prevent sticking and to meld flavors. Sauce will thicken and deepen in color.
  5. Finish with Fresh Basil: Remove sauce from heat and stir in torn fresh basil leaves for a bright, aromatic finish. Let cool slightly before spreading onto pizza dough.

Notes

  • Use ripe tomatoes for naturally sweet and flavorful sauce.
  • Simmer slowly to concentrate flavors while preserving fresh tomato essence.
  • Adjust thickness by adding water or tomato juice if too thick, or simmer longer if too watery.
  • Add fresh herbs at the end of cooking for brightest flavor and aroma.
  • Sauce tastes better when made a day ahead, allowing flavors to develop.
