Instructions

  1. Prepare the Chicken and Vegetables: Rinse and pat dry the chicken thighs, then season lightly with salt and pepper. Dice the green bell pepper and mince the garlic cloves, preparing all ingredients before cooking for a smooth process.
  2. Sear the Chicken: Heat olive oil in a large skillet or deep pan over medium heat. Add the chicken thighs and sear until golden brown on both sides, sealing in the juices and developing flavor.
  3. Cook Aromatics and Rice: Remove the chicken temporarily. In the same pan, sauté the garlic and bell pepper until fragrant and tender. Add the rice and stir for about a minute to coat it evenly with the pan flavors.
  4. Add Liquids and Pineapple: Return the chicken to the pan.
