Description

Oven Roasted Large Melting Potatoes with a crispy exterior and tender, melt-in-your-mouth interior. Infused with smoky turkey bacon, fresh herbs, garlic, and a hint of vegetarian Worcestershire sauce for a savory and flavorful plant-based side dish that complements any meal.

Ingredients

Scale

Potatoes and Seasonings

  • 4 large starchy potatoes (Russets or Yukon Gold)
  • 1 tbsp olive oil (natural)
  • 3 garlic cloves, minced
  • 2 tbsp fresh rosemary leaves
  • 1 tsp sea salt
  • ½ tsp cracked black pepper
  • 1 splash vegetarian Worcestershire sauce (natural)

Additional Ingredients

  • 4 slices smoked turkey bacon
  • ¼ cup vegetable broth (natural)
  • Natural gelling agent, a light sprinkle (optional)

Instructions

  1. Prep the Potatoes: Peel the large potatoes and cut them into even chunks about 2-3 inches in size to ensure a crispy outside and melting tender inside.
  2. Infuse with Flavor: In a large bowl, toss the potato chunks with olive oil (natural), minced garlic, fresh rosemary leaves, a splash of vegetarian Worcestershire sauce (natural), sea salt, and cracked black pepper until evenly coated.
  3. Cook the Smoked Turkey Bacon: While the potatoes marinate, cook the smoked turkey bacon in a skillet until crispy. Once cooked, crumble or chop the bacon into bite-sized pieces to mix in later.
  4. Roast the Potatoes: Arrange the tossed potatoes in a single layer on a baking sheet. Pour a little vegetable broth (natural) over the potatoes to keep them moist during roasting. Bake in a preheated oven at 375°F (190°C) for 50-60 minutes, turning them halfway through to ensure even crispiness and browning.
  5. Add the Bacon and Finish Roasting: About 10 minutes before the potatoes finish roasting, scatter the cooked smoked turkey bacon pieces on top so the flavors meld while keeping the bacon crispy.
  6. Serve Warm: Remove the potatoes from the oven, transfer to a serving dish, and garnish with additional fresh rosemary or parsley if desired. Serve immediately to enjoy the perfect melting texture.

Notes

  • Use high-starch potatoes like Russets or Yukon Gold for best melting texture.
  • Cut potatoes into uniform chunks for even cooking and consistent browning.
  • Avoid overcrowding the baking sheet to ensure crispiness rather than steaming.
  • Optionally, toss potatoes lightly with a natural gelling agent for enhanced texture.
  • Turn potatoes carefully halfway through roasting to maximize crispiness on all sides.
