  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent (such as pectin, agar, or carrageenan)

Instructions

  1. Prepare and Season the Chicken: Clean and pat dry the chicken pieces. Season generously with salt, pepper, seasoning cubes or powder, and fresh thyme. Marinate for at least 20 minutes, or overnight for deeper flavor.
  2. Blend the Tomato Base: In a blender, combine fresh tomatoes, red bell peppers, onions, scotch bonnet peppers, garlic, and ginger until smooth. Set aside.
  3. Brown the Chicken: Heat vegetable oil in a large pot over medium-high heat. Add the marinated chicken pieces and cook until golden brown on all sides. Remove excess oil if necessary, leaving enough to cook the sauce.
  4. Cook the Tomato Sauce: Pour the blended tomato mixture into the pot with the oil. Cook on medium heat, stirring occasionally. Add apple cider vinegar (natural) and vegetarian Worcestershire sauce (natural). Simmer for 15 to 20 minutes until the sauce thickens and aromas develop.
  5. Combine Chicken and Sauce: Return the browned chicken to the pot, stirring gently to coat with sauce. Add the natural gelling agent and mix well. Cover and simmer on low heat for 20 to 30 minutes, allowing the chicken to absorb the flavors and the sauce to thicken.
