Ingredients

Scale

Main Ingredients

  • 4 salmon fillets, skin-on
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 3/4 cup heavy cream (plant-based)
  • 1/4 cup Parmesan cheese (plant-based), grated
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Prepare the Salmon: Pat your salmon fillets dry and season generously with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat, then place the salmon skin-side down. Sear until the skin is crispy and golden, about 4 to 5 minutes. Flip gently and cook another 2 to 3 minutes until just cooked through. Remove salmon and set aside.
  2. Create the Sauce Base: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about one minute until aromatic. Stir in vegetarian Worcestershire sauce (natural) and a splash of apple cider vinegar (natural), cooking for another minute to meld the flavors.
  3. Add Cream and Cheese: Pour in the heavy cream (plant-based) slowly while stirring, then sprinkle in the grated Parmesan cheese (plant-based). Stir continuously until the sauce thickens slightly and becomes smooth and velvety, reaching a perfect consistency.
  4. Finish with Fresh Basil: Turn off the heat and fold in freshly torn basil leaves, reserving a few for garnish. Return the salmon fillets to the skillet, spoon the luscious sauce over the top, and let everything meld together for 2 minutes before serving.

Notes

  • Use fresh salmon for better texture and flavor.
  • Do not overcook the salmon; it will continue to cook slightly in the sauce.
  • A non-stick or cast-iron skillet works best for searing without sticking.
  • If sauce is too thick, add a splash of water or plant-based cream to loosen it.
  • Chop sun-dried tomatoes finely for even sauce texture and flavor distribution.
