Dough Ingredients
- 3 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast (one packet)
- 1 cup plant-based milk, warmed to 100-110°F
- 1/4 cup sugar, divided
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (natural)
- 1/4 cup plant-based butter, melted
Glaze Ingredients
- 1/2 cup natural maple syrup (natural)
- 2 tablespoons water
- 1/2 teaspoon natural gelling agent
Optional Filling Toppings and Variations
- Chopped toasted pecans
- Plant-based chocolate spread
- Fresh orange zest
- Roasted apples or pears brushed with extra natural maple syrup (natural)
- Alternative sweetener: date syrup (natural)
Instructions
- Prepare the dough: Warm the plant-based milk to 100-110°F to activate the yeast. In a mixing bowl, combine the warm milk, yeast, and 1 teaspoon of sugar. Let sit for 5 to 10 minutes until frothy.
- Mix dough ingredients: Add flour, remaining sugar, salt, cinnamon (natural), and melted plant-based butter into the yeast mixture. Stir until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.
- First rise: Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1 to 1.5 hours or until doubled in size.
- Shape the rolls: Gently punch down the dough and roll it out on a floured surface into a large rectangle. Brush with melted plant-based butter and sprinkle generously with cinnamon (natural) and sugar. Roll tightly from the long side and cut into equal slices.
- Second rise: Place rolls in a greased baking dish, leaving space between each. Cover and let rise for 30 to 45 minutes until puffed up.
- Bake and glaze: Preheat oven to 350°F. Bake rolls for 25-30 minutes or until golden brown. Meanwhile, prepare the glaze by gently warming natural maple syrup (natural), water, and natural gelling agent on the stove until smooth. Brush warm glaze generously over hot rolls as soon as they come out of the oven.
Notes
- Use fresh active dry yeast for the best rise and fluffiness.
- Do not overheat plant-based milk; temperatures above 110°F may kill the yeast.
- Do not skip the second rise to ensure soft, fluffy rolls.
- Brushing butter before cinnamon sugar helps sugar stick and adds richness.
- Apply the maple syrup (natural) glaze while rolls are hot for better absorption.
