Instructions

  1. Preparing the Dough: Cream the plant-based butter and granulated sugar together until light and fluffy. Add the plain plant-based yogurt and natural vanilla extract, mixing well to combine. In a separate bowl, sift the all-purpose flour, baking powder, and salt, then gradually incorporate these dry ingredients into the butter mixture. Knead gently until you form a soft, smooth dough that is not sticky. Wrap the dough in parchment paper and chill in the refrigerator for about 30 minutes to make rolling easier.
  2. Rolling and Cutting: Lightly dust your work surface with flour and roll out the chilled dough to approximately a quarter-inch thickness. Use a round cookie cutter or glass to cut out circles that will hold the filling. Imperfect shapes are charming and add to the homemade appeal.
  3. Adding the Filling: Place about one teaspoon of the thickened fruit jam, prepared with the natural gelling agent, in the center of each dough circle. Avoid overfilling to prevent spillage during baking.
