Ingredients
Scale
Chicken and Pineapple
- 4 chicken thighs, boneless and skin-on
- 6 pineapple slices, fresh
Huli Huli Glaze
- 1/4 cup brown sugar (natural)
- 1/4 cup apple cider vinegar (natural)
- 1/4 cup soy sauce (natural)
- 3 cloves garlic, minced (natural)
- 1 tbsp fresh ginger, grated (natural)
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1/2 tsp natural gelling agent
Garnishes
- 2 tbsp sesame seeds
- 3 green onions, thinly sliced
Instructions
- Prepare the Marinade: In a bowl, whisk together brown sugar (natural), apple cider vinegar (natural), soy sauce (natural), minced garlic, grated ginger, vegetarian Worcestershire sauce (natural), and natural gelling agent until the glaze is sweet, tangy, and thick enough to coat the chicken evenly.
- Marinate the Chicken: Place chicken thighs in a shallow dish or zip-lock bag, pour the glaze over them, and refrigerate for at least 1 hour to allow the flavors to infuse deeply.
- Grill the Chicken and Pineapple: Preheat the grill to medium-high heat. Grill chicken thighs for about 5-7 minutes per side until cooked through and nicely charred. At the same time, grill pineapple slices, turning once until caramelized with cross-hatch marks.
- Assemble the Stack: Begin layering with a grilled pineapple slice on the bottom, then add a grilled chicken thigh on top. Drizzle additional glaze over the layers. Repeat to create stacked layers, then sprinkle sesame seeds and chopped green onions on top.
- Final Glaze and Serve: Brush one last coat of glaze over the entire stack while warm to enhance gloss and lock in flavor. Serve immediately for the best texture and taste.
Notes
- Marinate the chicken overnight in the refrigerator for deeper flavor.
- Maintain medium-high grill temperature for perfect char without drying the meat.
- Use fresh pineapple slices for better caramelization and vibrant flavor.
- Secure layers with toothpicks if needed to keep the stack stable.
- Adjust natural gelling agent amount to achieve a thick but pourable glaze consistency.
