Grilled Mediterranean Chicken Tacos combine tender, juicy chicken marinated in vibrant Mediterranean herbs and spices, topped with fresh, crisp veggies and creamy plant-based yoghurt, all wrapped in warm tortillas for a quick, flavorful meal perfect for any occasion.

For the Marinade and Chicken

  • 2 Chicken Breasts, tender and lean
  • 2 tbsp Olive Oil (natural)
  • 3 Garlic Cloves, minced
  • 2 tbsp Lemon Juice (natural)
  • 1 tbsp Vegetarian Worcestershire Sauce (natural)
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • Salt, to taste
  • Freshly Ground Black Pepper, to taste

For the Fresh Veggie Topping

  • 1/2 Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved or chopped
  • 1/4 Red Onion, thinly sliced

Other Ingredients

  • 6 Small Tortillas, soft and warm
  • Plant-Based Yoghurt (plant-based), for dolloping
  • Fresh Parsley or Mint, chopped for garnish

Instructions

  1. Prepare the Marinade and Chicken: In a bowl, whisk together olive oil (natural), lemon juice (natural), minced garlic, vegetarian Worcestershire sauce (natural), dried oregano, ground cumin, paprika, salt, and freshly ground black pepper. Add the chicken breasts and coat them thoroughly with the marinade. Let it rest for at least 20 minutes to absorb all those wonderful flavors.
  2. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Grill each chicken breast for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the chicken develops a lovely, slightly charred exterior. After grilling, let the chicken rest for 5 minutes, then slice it thinly for the tacos.
  3. Prepare the Fresh Veggies: While the chicken grills, chop cucumber, cherry tomatoes, and red onion into bite-sized pieces. Combine them in a bowl for an easy fresh topping with plenty of crunch and juiciness.
  4. Warm the Tortillas: Heat tortillas gently in a dry pan or wrap them in foil and warm them in the oven until soft and pliable. This prevents cracking and makes folding easier when assembling your tacos.
  5. Assemble Your Grilled Mediterranean Chicken Tacos: Layer the sliced grilled chicken onto each tortilla, top with the fresh veggie mix, add a dollop of plant-based yoghurt (plant-based), and sprinkle with fresh parsley or mint. Serve immediately and enjoy!
