Instructions
- Marinate the Chicken. In a bowl, combine the chicken thighs with minced garlic, fresh lemon juice, extra virgin olive oil, vegetarian Worcestershire sauce (natural), apple cider vinegar, sea salt, black pepper, and chopped fresh oregano and parsley. Toss everything thoroughly to coat the chicken evenly. Refrigerate and let marinate for at least 30 minutes to allow flavors to meld beautifully.
- Prepare the Oven and Bake. Preheat your oven to 400°F (200°C). Arrange the marinated chicken thighs in a baking dish and spoon some of the marinade over the top. Roast for about 25 minutes or until the chicken is cooked through and golden. Halfway through baking, sprinkle crumbled plant-based feta evenly over the chicken and continue roasting until the feta softens and the chicken develops a lovely aroma.
- Final Garnish and Serve. Remove the chicken from the oven and drizzle with a little fresh lemon juice. Scatter additional chopped fresh oregano and parsley on top for vibrant color and extra freshness. Serve immediately and enjoy.
