Instructions

  1. Prep the Chicken: Cut the boneless, skinless chicken thighs into bite-sized pieces. Pat them dry thoroughly with paper towels, then toss in cornstarch until each piece is evenly coated. This coating will become wonderfully crispy once fried.
  2. Make the Sauce: In a bowl, combine vegetarian Worcestershire sauce (natural), soy sauce (natural), apple cider vinegar, brown sugar (natural), minced garlic, grated ginger, chili flakes, and the natural gelling agent. Stir well until the sugar dissolves and set the sauce mixture aside.
  3. Fry the Chicken: Heat vegetable oil in a deep pan or wok until shimmering but not smoking. Fry the chicken pieces in small batches to keep oil temperature steady, cooking each batch for 5-7 minutes until golden brown and crisp. Remove and drain on a paper towel-lined plate.
  4. Cook the Sauce: Drain all but one tablespoon of oil from the pan. Pour in the sauce mixture and simmer gently, stirring consistently to prevent burning, until the sauce thickens and becomes glossy.
