Garlic Herb Chicken with Mashed Potatoes features tender, juicy chicken breasts infused with fresh herbs and a flavorful marinade, paired with creamy plant-based mashed potatoes. This easy yet elegant recipe offers a comforting and balanced meal with aromatic herbs, a savory depth, and a satisfying texture, perfect for family dinners or special occasions.

Ingredients

Scale

For the Chicken Marinade

  • 2 boneless chicken breasts
  • 3 fresh garlic cloves, finely minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 tablespoon apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon plant-based butter
  • Salt and pepper, to taste

For the Mashed Potatoes

  • 4 large Russet potatoes, peeled and quartered
  • 1/4 cup plant-based milk (unsweetened almond, oat, or soy)
  • 2 tablespoons plant-based butter
  • Salt and pepper, to taste
  • 1/2 teaspoon natural gelling agent dissolved in warm plant-based milk (optional)

Instructions

  1. Prepare the Chicken Marinade: Finely mince the garlic and combine it with chopped parsley, thyme, rosemary, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), plant-based butter, salt, and pepper. Thoroughly coat the chicken breasts with this mixture and let them marinate for at least 20 minutes to absorb the flavors.
  2. Boil and Prepare the Potatoes: While the chicken marinates, peel and quarter the Russet potatoes. Boil them in salted water for about 15 minutes or until easily pierced with a fork. Drain well and return to the pot for mashing.
  3. Cook the Chicken: Heat a skillet over medium heat with a small amount of plant-based butter. Place the marinated chicken breasts in the skillet and cook each side for 6 to 7 minutes until golden brown and fully cooked. Avoid flipping too often to develop a beautiful sear.
  4. Mash the Potatoes: Add plant-based milk and additional plant-based butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Optionally, stir in a natural gelling agent dissolved in a small amount of warm plant-based milk to enhance creaminess and texture.
  5. Plate and Serve: Arrange the cooked chicken breasts alongside a generous scoop of mashed potatoes. Spoon any pan juices over the chicken for extra richness and garnish with freshly chopped herbs for added aroma and presentation.

Notes

  • Marinate the chicken thoroughly, even a short time elevates the flavors significantly.
  • Use a meat thermometer and remove chicken once it reaches 165°F to ensure juiciness.
  • Drain and let potatoes steam-dry briefly before mashing to prevent watery texture.
  • Use room temperature plant-based butter and plant-based milk to achieve silky mashed potatoes without clumps.
  • Opt for fresh herbs over dried varieties to brighten the dish’s flavor, especially parsley and thyme.
