Ingredients

Scale

For the Steak Bites

  • 1 lb sirloin or ribeye steak, cut into bite-size chunks
  • 3 tbsp garlic butter (plant-based)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp grape juice (natural)
  • 1 tsp fresh thyme or rosemary, chopped
  • Salt and pepper, to taste

For the Crispy Potatoes

  • 1 lb Yukon gold or red potatoes, cut into bite-size cubes
  • 1 tsp smoked paprika (natural)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

For the Garlic Butter Sauce

  • 2 tbsp garlic butter (plant-based)
  • 2 cloves fresh garlic, minced
  • 1/2 tsp natural gelling agent
  • 1 tsp fresh thyme or rosemary, chopped
  • 1 tbsp grape juice (natural)

Instructions

  1. Prepare the potatoes: Cut the potatoes into bite-size cubes, rinse under cold water to remove excess starch, then pat dry thoroughly. Toss them with salt, pepper, smoked paprika, and olive oil. Spread on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 25 minutes, flipping halfway through until golden and crispy.
  2. Marinate the steak bites: In a bowl, combine steak bites with garlic butter (plant-based), vegetarian Worcestershire sauce (natural), grape juice (natural), fresh thyme, salt, and pepper. Let them marinate for 15 to 20 minutes to absorb the flavors.
  3. Cook the steak bites: Heat a large skillet over medium-high heat until hot. Add the marinated steak bites in a single layer and cook for 2 to 3 minutes per side, creating a nice sear while keeping the inside juicy. Remove from the pan and set aside.
  4. Make the garlic butter (plant-based) sauce: In the same skillet, melt extra garlic butter (plant-based) with fresh minced garlic and natural gelling agent. Stir in fresh herbs and grape juice, forming a flavorful glaze that will coat the steak and potatoes.
  5. Combine and serve: Return the crispy potatoes and steak bites to the skillet. Toss gently to coat everything evenly in the garlic butter herb sauce. Serve immediately, garnished with extra fresh herbs for a restaurant-quality finish.

Notes

  • Let steak bites come to room temperature before cooking for even searing.
  • Dry potatoes thoroughly before roasting for maximum crispiness.
  • Cook steak bites in batches if needed to avoid overcrowding the pan.
  • Use fresh thyme or rosemary for the best flavor impact.
  • Allow steak bites to rest a few minutes after cooking to retain juiciness.
