Ingredients

Scale

Salad Ingredients

  • 1 bunch fresh asparagus, trimmed
  • 4 slices smoked turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, roughly chopped

Dressing

  • 3 tablespoons apple cider vinegar (natural)
  • 2 tablespoons extra virgin olive oil (natural)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the asparagus: Trim the tough ends off the asparagus and blanch them in boiling water for 2-3 minutes until tender-crisp. Immediately transfer them to ice water to stop cooking and preserve their bright green color.
  2. Cook the smoked turkey bacon: In a skillet over medium heat, cook the smoked turkey bacon until crisp. Drain on paper towels and chop into bite-sized pieces once cooled.
  3. Chop the vegetables: Slice the cherry tomatoes in halves, dice the cucumber, and thinly slice the red onion. Roughly chop the fresh parsley to add at the end.
  4. Make the dressing: In a small bowl, whisk together apple cider vinegar (natural), extra virgin olive oil (natural), sea salt, and freshly ground black pepper until emulsified and bright.
  5. Toss everything together: Place the asparagus, chopped vegetables, smoked turkey bacon, and parsley in a large bowl. Pour the dressing over and gently toss to coat everything evenly. Taste and adjust seasoning if needed.

Notes

  • Blanch asparagus just enough to keep tender crispness and vibrant color.
  • Cut veggies into similar-sized pieces for consistent texture and presentation.
  • Adjust acidity and seasoning of the dressing to your preference for bright flavor.
  • Use fresh produce and good quality olive oil for the best taste.
  • The salad tastes best fresh but keeps well refrigerated for up to 2 days.
  • Omit turkey bacon and add toasted nuts or seeds for a vegetarian variation.
  • Sprinkle shredded plant-based cheese for a creamy contrast if desired.
  • Add fresh chopped chili or cayenne pepper for extra heat.
  • Toss in avocado slices or citrus segments for extra freshness.
  • Swap parsley with basil, dill, or mint based on preference.
