Perfect for lunches, picnics, or dinner sides, this salad balances comfort and vibrant freshness with a quick preparation time, colorful ingredients, and a tangy, delicious dressing.

Ingredients

Scale

Pasta and Protein

  • 1 1/2 cups Ditalini Pasta
  • 6 slices Smoked Turkey Bacon

Vegetables & Cheese

  • 1 cup Crisp Cucumbers, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Red Bell Peppers, diced
  • 1/4 cup Red Onion, finely diced
  • 3/4 cup Plant-Based Cheese (creamy), diced
  • 2 tablespoons Fresh Parsley, chopped

Dressing

  • 2 tablespoons Apple Cider Vinegar (natural)
  • 3 tablespoons Extra Virgin Olive Oil (natural)
  • 1 teaspoon Dijon Mustard (natural)
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Cook the Ditalini Pasta: Bring a large pot of salted water to a boil. Add the ditalini pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process and cool the pasta down.
  2. Prepare the Smoked Turkey Bacon: In a skillet over medium heat, cook the smoked turkey bacon until crispy. Remove from heat and chop into bite-sized pieces once cool enough to handle.
  3. Chop the Vegetables and Cheese: While the pasta cooks and bacon crisps, dice cucumbers, cherry tomatoes, red bell peppers, red onion, and plant-based cheese into uniform pieces for balanced flavors.
  4. Make the Dressing: In a small bowl, whisk together apple cider vinegar (natural), extra virgin olive oil (natural), Dijon mustard (natural), salt, and pepper until well combined and smooth.
  5. Combine Ingredients: In a large bowl, mix the cooled pasta, crispy turkey bacon, chopped vegetables, and plant-based cheese. Pour the dressing over everything and toss gently to coat evenly.
  6. Add Fresh Herbs and Chill: Fold in freshly chopped parsley for a refreshing finish. Cover the salad and refrigerate for at least 30 minutes to allow flavors to mingle before serving.

Notes

  • Cook pasta just right to keep it firm and avoid mushiness.
  • Rinse pasta thoroughly with cold water to stop cooking and help it absorb flavors.
  • Use fresh vegetables and quality olive oil for the best taste.
  • Taste and adjust the dressing acidity or seasoning before mixing.
  • Chill the salad for at least 30 minutes for enhanced flavor and texture harmony.
