Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 2 tbsp sugar (natural)
  • 1 tsp salt
  • 1 cup warm water (about 110°F / 43°C)
  • 1 tbsp vegetarian Worcestershire sauce
  • 2 tbsp olive oil
  • 1/2 cup plant-based milk
  • 1 tsp natural gelling agent

Optional Variations

  • 1 tbsp fresh rosemary or thyme (for herb-infused rolls)
  • 1 tbsp garlic butter (plant-based) (for topping)
  • Replace up to 1 3/4 cups all-purpose flour with whole wheat flour (for whole wheat blend)
  • 1 tsp cinnamon and 2 tbsp maple syrup (natural) (for sweet cinnamon rolls)
  • Sesame, poppy, or sunflower seeds (for topping)

Instructions

  1. Prepare the Yeast Mixture: Combine warm water, sugar (natural), and active dry yeast in a bowl. Let it sit for 5 to 10 minutes until frothy, confirming the yeast is active and ready.
  2. Mix the Dough: In a large bowl, stir together flour, salt, and natural gelling agent. Add vegetarian Worcestershire sauce, olive oil, and plant-based milk. Pour in the yeast mixture and mix until a sticky dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic, developing gluten for structure.
  4. First Rise: Place dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm spot until doubled in size, about 1 hour.
  5. Shape the Rolls: Punch the dough down gently, divide into equal portions, and shape each into smooth balls. Arrange the rolls with space in a greased baking dish.
  6. Second Rise: Cover the shaped rolls and allow to rise for 30 to 40 minutes until puffy.
  7. Bake to Golden Perfection: Preheat oven to 375°F (190°C). Bake the rolls for 15 to 18 minutes until golden brown. Brush immediately with olive oil or melted butter (plant-based) for a shiny finish.

Notes

  • Use warm water that is not hot to activate yeast effectively.
  • Thorough kneading is essential for fluffy, well-structured rolls.
  • Allow sufficient rising time for a light, airy texture.
  • Do not overbake to prevent drying out the rolls.
  • Brush rolls with oil or butter (plant-based) immediately after baking to lock in moisture.
