Ideal for busy weeknights, it delivers rich Mediterranean-inspired flavors with effortless convenience and minimal cleanup.

Ingredients

Scale

Protein

  • 23 chicken breasts, tender and juicy

Pasta

  • 8 oz uncooked penne or rotini pasta

Liquids & Sauces

  • 1 cup chicken broth (natural)
  • 1 cup vegetable broth (natural)
  • 2 tbsp apple cider vinegar (natural)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 cup plant-based heavy cream

Cheese & Texture

  • 1 cup plant-based cheese (plant-based), shredded or cubed
  • 1 tsp natural gelling agent

Seasonings & Aromatics

  • 3 garlic cloves, fresh, minced or whole
  • 1 tsp onion powder (natural)
  • 1 tbsp Italian seasoning (natural), divided
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. Prepare the Chicken: Place the chicken breasts in the bottom of your crockpot and season them lightly with salt, pepper, and half of the Italian seasoning (about 1/2 tablespoon).
  2. Add Liquids and Flavorings: Pour the chicken broth, vegetable broth, and apple cider vinegar over the chicken. Add the vegetarian Worcestershire sauce, garlic cloves, onion powder, and the remaining half of the Italian seasoning. Stir gently to combine the flavors but leaving the chicken mostly submerged.
  3. Cook the Chicken: Cover and cook on low for about 4-5 hours or on high for 2-3 hours until the chicken is tender and easy to shred with forks.
  4. Shred and Mix: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and add the plant-based heavy cream and plant-based cheese. Stir well to incorporate the creamy texture fully into the sauce.
  5. Add Pasta and Natural Gelling Agent: Add the uncooked pasta and the natural gelling agent, mixing carefully to combine. Ensure the pasta is completely submerged in the sauce for even cooking.
  6. Final Cooking: Cover and cook on high for about 30-40 minutes, stirring every 10 minutes to prevent sticking. Cook until the pasta is al dente and the sauce is thick and creamy.

Notes

  • Use fresh garlic to enhance aroma and flavor.
  • Add pasta towards the end of cooking to avoid overcooked, mushy noodles.
  • Stir frequently in the last step to keep pasta from sticking and ensure even cooking.
  • Adjust seasoning with salt and pepper after cooking to achieve perfect taste balance.
  • Choose quality plant-based cheese for a creamy texture and rich flavor.
