Instructions

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, and dried Italian herbs. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
  2. Sauté the aromatics: In the same skillet, add more olive oil if needed. Sauté minced garlic until fragrant and golden, about 30 seconds to 1 minute.
  3. Build the creamy sauce: Add sun-dried tomatoes and fresh spinach to the skillet, cooking just until the spinach wilts. Pour in plant-based cream, apple cider vinegar, vegetarian Worcestershire sauce (natural), and sprinkle in the natural gelling agent. Stir gently and let the sauce simmer until it thickens to a rich consistency.
