Instructions

  1. Prepare the Ingredients: Wash and chop all vegetables into bite-sized pieces. Mince garlic and shallots finely. Keep each ingredient separate for staged cooking.
  2. Cook Pasta: Boil the pasta in salted water until al dente, about 1-2 minutes less than package directions. Drain and reserve some pasta water for adjusting sauce later.
  3. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add shallots and garlic, cook until fragrant and translucent. Add bell peppers and zucchini, sauté until tender but still crisp. Stir in cherry tomatoes and spinach last to wilt gently.
  4. Prepare the Creamy Sauce: In a bowl, whisk together plant-based cream, vegetarian Worcestershire sauce (natural), lemon juice (natural), salt, pepper, and natural gelling agent until smooth. Pour into the skillet with vegetables, stirring gently over low heat to blend and thicken.
