Instructions
- Prepare the pasta: Bring a large pot of salted water to a boil and cook your chosen pasta until al dente according to package instructions. Drain and set aside, reserving a little pasta water to adjust sauce consistency later.
- Cook the shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season lightly with salt and pepper. Sauté until they turn pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- Make the garlic cream sauce: In the same skillet, add a little more olive oil if needed, then gently sauté minced garlic until fragrant but not browned. Pour in the plant-based cream, then stir in vegetarian Worcestershire sauce, lemon juice, salt, and pepper. Let it simmer gently for 3-5 minutes. If a thicker sauce is desired, sprinkle in natural gelling agent and whisk thoroughly.
- Combine and finish: Add the cooked shrimp back into the skillet, stirring to coat them in the sauce. Then toss in the pasta, mixing well to ensure even coverage. If the sauce feels too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
