Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese (plant-based), drained
  • 2 cups fresh spinach, washed and chopped
  • 1/2 cup plant-based cheese, shredded
  • 3 large eggs
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon natural gelling agent
  • Salt (natural), to taste
  • Black pepper (natural), to taste
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Prepare the vegetables: Wash and chop the fresh spinach. Finely dice the onion and mince the garlic. In a pan, heat olive oil over medium heat. Sauté the onion and garlic until translucent and fragrant, then add the spinach and cook just until wilted. Remove from heat and let cool slightly.
  2. Mix the wet ingredients: In a large bowl, whisk together the eggs, drained cottage cheese (plant-based), shredded plant-based cheese, vegetarian Worcestershire sauce (natural), salt, black pepper (natural), and natural gelling agent until well combined. This will form the creamy base of the quiche.
  3. Combine and season: Add the sautéed spinach, onions, and garlic to the bowl with the wet ingredients. Gently fold everything together to evenly distribute the greens throughout the mixture. Adjust seasoning if needed.
  4. Bake the quiche: Preheat the oven to 180°C (350°F). Lightly grease a baking dish or pie pan, then pour in the combined mixture. Bake for 35-40 minutes until the top is golden and the center is set but still slightly springy to the touch.
  5. Cool and serve: Allow the quiche to cool for 10 minutes after baking to help it set fully and enable cleaner slicing. Serve warm or at room temperature for best flavor and texture.

Notes

  • Use fresh spinach rather than frozen to keep the quiche vibrant and avoid excess moisture.
  • Drain cottage cheese (plant-based) well to remove excess liquid for a firmer texture.
  • Do not overbake; the quiche should have a slight wobble in the middle when removed to prevent dryness.
  • Let the quiche cool after baking to firm up and make slicing easier.
  • Follow package instructions carefully when using the natural gelling agent to avoid a rubbery texture.
