Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the chosen pasta according to the package instructions until al dente. Drain the pasta, reserving a small cup of pasta water, then set aside.
  2. Sauté Aromatics and Vegetables: In a large skillet, heat olive oil (natural) over medium heat. Add minced fresh garlic and sauté for about 1 minute until fragrant but not browned. Add the cherry tomatoes and fresh spinach or kale, cooking gently until greens wilt and tomatoes soften, around 3 to 4 minutes.
  3. Create the Cottage Cheese Sauce: In a bowl, blend plant-based cottage cheese with vegetarian Worcestershire sauce (natural), lemon juice (natural), salt, freshly ground black pepper, and a splash of the reserved pasta water. Stir in the natural gelling agent to enhance creaminess. Pour this mixture into the skillet with vegetables and gently combine, heating through.
  4. Combine and Toss: Add the cooked pasta to the skillet and toss well to coat evenly with the creamy sauce. If the sauce is too thick, add more reserved pasta water until desired consistency is reached.
  5. Finish with Fresh Herbs: Remove the skillet from heat and sprinkle chopped fresh basil or parsley over the pasta. Give everything a gentle toss and serve immediately to enjoy the best flavor and texture.
