Ingredients

Scale

Protein

  • 1 lb chicken breasts or thighs, thinly sliced into bite-sized strips

Vegetables

  • 1 bell pepper, sliced
  • 1 carrot, julienned or sliced
  • 1 cup snap peas

Noodles

  • 8 oz soba noodles, rice noodles, or whole wheat noodles

Teriyaki Sauce

  • 1/4 cup soy sauce (natural)
  • 2 tbsp brown sugar or maple syrup (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp natural gelling agent (optional), dissolved in warm water

Cooking Oil and Garnish

  • 1 tbsp sesame oil (natural)
  • 2 tbsp toasted sesame seeds
  • Optional garnishes: chopped green onions, crushed red pepper flakes, drizzle of sesame oil (natural)

Instructions

  1. Prepare the Ingredients: Slice the chicken into thin, bite-sized strips for even cooking. Chop the vegetables into uniform pieces and mince the garlic and grate the fresh ginger to release their flavors.
  2. Cook the Noodles: Boil the noodles in salted water according to package instructions until just tender. Drain and rinse briefly under cold water to stop cooking and prevent sticking. Set aside.
  3. Make the Teriyaki Sauce: In a bowl, whisk together soy sauce (natural), brown sugar or maple syrup (natural), apple cider vinegar (natural), minced garlic, grated ginger, and vegetarian Worcestershire sauce (natural). Stir in the dissolved natural gelling agent to thicken the sauce slightly and achieve a glossy finish.
  4. Cook the Chicken and Vegetables: Heat sesame oil (natural) in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set aside. Sauté the vegetables just until tender-crisp, keeping their bright color and crunch.
  5. Combine Everything: Return the chicken to the skillet with the vegetables. Pour the teriyaki sauce over everything and toss to coat evenly. Add the cooked noodles and gently toss to combine so the noodles are well coated with the sauce and mixed with chicken and vegetables.
  6. Serve and Garnish: Transfer the Chicken Teriyaki Noodles to serving bowls. Sprinkle toasted sesame seeds on top for added texture and flavor. Add optional garnishes like chopped green onions, crushed red pepper flakes, and a light drizzle of sesame oil (natural). Serve warm and fresh.

Notes

  • Use fresh garlic and ginger for the best flavor.
  • Do not overcook the vegetables; keep them crunchy for texture and nutrition.
  • Cook noodles al dente as they soften further when mixed with the sauce.
  • Adjust sauce thickness by adding more natural gelling agent if needed.
  • For extra flavor, marinate the chicken briefly in some teriyaki sauce before cooking.
