Description

Chicken Quesadillas are a quick and flavorful meal featuring tender chicken, melted plant-based cheese, and smoky spices wrapped in crispy tortillas. Perfect for busy weeknights or casual family dinners, this recipe combines simple ingredients and easy steps to deliver a satisfying and customizable dish everyone will enjoy.

Ingredients

Scale

Chicken Filling

  • 2 cups cooked chicken, shredded or diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Salt and pepper, to taste

Vegetables

  • 1 cup diced bell peppers
  • 1 tablespoon olive oil

Assembly

  • 4 large flour tortillas (use gluten-free tortillas if preferred)
  • 1 1/2 cups melted (plant-based) cheese (such as shredded mozzarella or cheddar-style)
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare the Chicken Filling: In a bowl, mix the shredded or diced cooked chicken with smoked paprika, onion powder, vegetarian Worcestershire sauce (natural), salt, and pepper until well combined to build bold, smoky flavors.
  2. Sauté the Veggies: Heat olive oil in a pan over medium heat, then add the diced bell peppers. Cook until just tender, about 3-4 minutes, preserving their natural crunch and sweetness.
  3. Assemble the Quesadillas: Lay one tortilla flat. Sprinkle a generous layer of melted (plant-based) cheese over half the tortilla, then add the chicken mixture and sautéed bell peppers on top. Finish with another handful of cheese and fold the tortilla over to enclose the fillings.
  4. Cook Until Golden and Crispy: Heat a pan over medium heat with a small amount of olive oil. Place the folded quesadilla in the pan and cook for 3-4 minutes on each side until the tortilla is crispy and the cheese is fully melted inside.
  5. Slice and Garnish: Remove the quesadilla from the pan and let it rest for one minute. Slice into wedges using a pizza cutter, then garnish with chopped fresh cilantro for a fresh, colorful finish before serving.

Notes

  • Use warm tortillas to prevent cracking while folding.
  • Do not overfill the quesadillas to ensure easy flipping and crispiness.
  • Cook on medium to low heat for perfect melting without burning.
  • Let quesadillas rest for a minute after cooking to allow fillings to set.
  • Cut with a pizza cutter for clean and quick wedges.
