Description

A classic, comforting Chicken Noodle Soup with tender chicken, fresh vegetables, and perfectly cooked noodles in a rich, savory broth. Easy to prepare, customizable, and perfect for a cozy meal any time of the year.

Ingredients

Scale

Protein

  • 2 chicken breasts or thighs, boneless

Vegetables

  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped

Noodles and Broth

  • 4 cups chicken broth (store-bought or homemade)
  • 6 ounces egg noodles

Seasonings and Add-ins

  • 1 tablespoon olive oil
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar (natural)
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies and chicken: Dice carrots, celery, and onion into bite-sized pieces. Mince the garlic cloves. Trim and cut the chicken into small pieces or leave whole to shred later. This prep ensures even cooking and flavor melding.
  2. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until translucent and fragrant. Stir in celery and carrots, letting them soften for about 5 minutes, building the soup’s flavorful base.
  3. Add broth and chicken: Pour in chicken broth along with vegetarian Worcestershire sauce (natural) and apple cider vinegar (natural). Bring to a simmer, then add chicken. Cook gently until chicken is tender and cooked through.
  4. Cook the noodles: In a separate pot, boil egg noodles until just tender. Drain and set aside to prevent overcooking and maintain firmness.
  5. Combine and season: Remove chicken and shred using two forks. Return shredded chicken to the pot, stir in noodles and chopped fresh parsley. Season with salt and pepper to taste. Heat through for a couple of minutes before serving.

Notes

  • Use homemade chicken broth for richer flavor whenever possible.
  • Cook noodles separately and add last to prevent overcooking.
  • Opt for fresh vegetables over frozen for better flavor and texture.
  • Adjust seasoning gradually and taste frequently, especially after adding noodles.
  • Add fresh parsley at the end to keep its bright color and flavor.
