  • Diet: Gluten Free

Description

Easy Cheesy Pizza Pockets are warm, melty handheld snacks filled with gooey plant-based cheese, savory tomato sauce (natural), and perfectly seasoned vegetables or proteins. Quick to prepare and fully customizable, these pockets deliver classic pizza flavors in a convenient size perfect for any occasion.

Ingredients

Pizza Dough

  • Store-bought or homemade pizza dough

Filling

  • Plant-based cheese
  • Tomato sauce (natural)
  • Vegetarian Worcestershire sauce (natural)
  • Diced bell peppers
  • Diced mushrooms
  • Diced spinach
  • Italian seasoning (natural)
  • Natural gelling agent

Finishing

  • Olive oil
  • Italian seasoning (natural), for sprinkling

Instructions

  1. Prepare Your Ingredients: Chop your chosen vegetables finely and pre-cook any proteins or vegetables that require softening. In a bowl, combine tomato sauce (natural), vegetarian Worcestershire sauce (natural), Italian seasoning (natural), and a dash of olive oil to create a flavorful filling base.
  2. Roll Out the Dough: On a lightly floured surface, roll out the pizza dough to about 1/4 inch thickness forming rectangles approximately 6×8 inches in size to create the perfect pouch size.
  3. Assemble the Pockets: Spoon a generous amount of the tomato mixture onto one half of each dough rectangle. Add a hearty layer of plant-based cheese and then sprinkle the prepared vegetables or proteins on top. Fold the dough over and press the edges firmly to seal the pockets.
  4. Brush and Bake: Brush the top of each pocket with olive oil and sprinkle a pinch of Italian seasoning (natural). Bake in a preheated oven at 400°F for 15-18 minutes or until the pockets are golden brown and the cheese is melted inside.
  5. Cool and Serve: Allow the pockets to cool slightly before eating to avoid burning from hot filling. Serve warm with dipping sauces or a fresh salad.

Notes

  • Seal pockets well using a fork to crimp edges, preventing filling leakage during baking.
  • Do not overfill to avoid bursting or soggy pockets.
  • Use a plant-based cheese with good melt quality for best results.
  • Pre-cook mushrooms and bell peppers to reduce excess moisture.
  • Brush edges with olive oil for a crisp exterior finish.
