Ingredients

Scale

Main Ingredients

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 3/4 cup raw cashews
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp soy sauce (natural)
  • 1/4 cup grape juice (natural)
  • 3 cloves garlic, freshly minced
  • 1 tbsp fresh ginger, finely grated
  • 3 green onions, chopped (separate white and green parts)
  • 1 tsp natural gelling agent
  • 1 tsp sesame oil (natural)
  • 2 tbsp vegetable oil

Instructions

  1. Prep Your Ingredients: Cut the chicken thighs into bite-sized pieces. Finely chop the garlic, ginger, and green onions, keeping the white and green parts separate. Measure out the vegetarian Worcestershire sauce, soy sauce, grape juice, cashews, sesame oil, vegetable oil, and natural gelling agent to streamline cooking.
  2. Toast the Cashews: Heat a dry skillet over medium heat. Add the raw cashews and toast them for 3 to 4 minutes, stirring frequently until they turn golden and fragrant. Remove from heat and set aside for garnish and texture.
  3. Cook the Chicken: In a large pan or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook for 5 to 7 minutes, stirring occasionally, until they develop a golden crust and are cooked through. Remove the chicken from the pan and set aside.
  4. Prepare the Sauce: In the same pan, add a little more vegetable oil if needed. Sauté the garlic, ginger, and the white parts of the green onions until fragrant, about 1 to 2 minutes. Pour in the vegetarian Worcestershire sauce, soy sauce, grape juice, and sesame oil. Stir well and bring the mixture to a gentle simmer.
  5. Thicken the Sauce: In a small bowl, combine the natural gelling agent with cold water to make a slurry. Slowly whisk this mixture into the simmering sauce. Continue stirring until the sauce thickens, turns glossy, and coats the back of a spoon.
  6. Combine Everything: Return the cooked chicken to the pan and toss to thoroughly coat with the sauce. Stir in most of the toasted cashews, reserving some to garnish the finished dish.

Notes

  • Chop chicken into uniform pieces to ensure even cooking.
  • Stir-fry on medium-high heat to achieve a perfect sear without drying out the chicken.
  • Toast cashews only until golden to maximize flavor without burning.
  • Use freshly minced garlic and grated ginger for vibrant flavors.
  • Taste the sauce as you add ingredients to balance sweetness and saltiness to your preference.
