Ingredients

Scale

Dough Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup brown sugar (natural)
  • 1/4 cup plant-based butter, softened
  • 3/4 cup warm plant-based milk
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon apple cider vinegar (natural)
  • 1 teaspoon vanilla extract (natural)
  • 1/2 teaspoon sea salt

Caramel Glaze Ingredients

  • 1/4 cup plant-based butter
  • 1/2 cup brown sugar (natural)
  • 2 tablespoons maple syrup (natural)
  • 1/4 teaspoon sea salt
  • 1 teaspoon natural gelling agent

Optional Fillings and Garnishes

  • Chopped pecans or walnuts (optional)
  • Finely chopped apples or pears (optional)
  • Cinnamon, nutmeg, or cardamom (optional)
  • Melted dark chocolate (plant-based) for drizzling (optional)
  • Orange or lemon zest for caramel glaze (optional)
  • Chopped nuts for garnish (optional)
  • Powdered sugar (plant-based) for dusting (optional)
  • Creamy plant-based icing for drizzle (optional)

Instructions

  1. Prepare the Dough: Mix warm plant-based milk with active dry yeast and a pinch of apple cider vinegar (natural). Let sit until foamy. Combine with flour, brown sugar (natural), softened plant-based butter, vanilla extract (natural), and sea salt to form a soft dough. Knead until smooth and elastic. Cover and let rise in a warm place until doubled in size.
  2. Make the Caramel Glaze: In a saucepan, melt plant-based butter with brown sugar (natural), maple syrup (natural), sea salt, and natural gelling agent over medium heat. Stir gently until smooth and slightly thickened. Keep warm for later use.
  3. Roll and Fill: Roll the risen dough into a rectangle. Spread a thin layer of plant-based butter, sprinkle brown sugar (natural), and add any optional fillings like nuts, fruit, or spices. Roll tightly from one edge into a log and cut into equal-sized rolls.
  4. Bake the Rolls: Place the cut rolls into a baking dish lined with parchment paper or lightly greased. Pour half the warm caramel glaze over the rolls. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes or until golden brown and cooked through.
  5. Finish with More Caramel: Remove from oven and pour the remaining caramel glaze over the hot rolls. Let cool slightly before serving to enjoy the gooey texture.

Notes

  • Make sure the milk is warm, not hot, to activate the yeast properly.
  • Knead the dough well for a smooth, elastic texture that rises nicely.
  • Keep the caramel glaze warm but not too hot to ensure it spreads easily without running off.
  • Use dental floss or a sharp knife for clean, even slices that hold shape.
  • Allow rolls to cool for a few minutes after baking to set the caramel glaze and achieve the perfect sticky texture.
