Instructions

  1. Activate the Yeast: Dissolve active dry yeast in warm water with a pinch of brown sugar. Let it sit 5 to 10 minutes until frothy and bubbly to ensure the yeast is active.
  2. Mix the Dough: In a large bowl, combine flour, natural gelling agent, and brown sugar. Add the yeast mixture and melted plant-based butter, stirring until a sticky dough forms.
  3. Knead and Rise: Turn the dough onto a floured surface and knead for 8 to 10 minutes until soft and elastic. Place dough in a lightly greased bowl, cover, and let rise in a warm spot until doubled in size, about 1 hour.
  4. Shape the Pretzels: Punch down the risen dough, divide it as desired. Roll into long ropes and twist into classic pretzel shapes or cut into small pieces for pretzel bites. Keep sizes consistent for even baking.
  5. Prepare the Baking Soda Bath: Bring water to a boil and add baking soda. Dip each pretzel or bite in the bath for 20 to 30 seconds, then place on a parchment-lined baking sheet.
