Ingredients
Scale
Beef Mixture
- 1 lb lean ground beef
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tbsp mustard (natural)
- 1 tbsp tomato paste (natural)
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
Vegetables and Toppings
- 4 cups mixed greens (spinach and romaine)
- 1 cup cherry tomatoes, quartered
- 1/2 cup red onion, thinly sliced
- 1/3 cup pickles, sliced into bite-sized pieces
- 1/2 cup shredded plant-based cheese
Dressing
- 2 tbsp apple cider vinegar
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the Beef Mixture: In a bowl, combine ground beef with vegetarian Worcestershire sauce (natural), mustard (natural), tomato paste (natural), garlic powder, salt, and black pepper. Mix well until evenly incorporated. Set aside to marinate briefly while prepping veggies.
- Cook the Beef: Heat a nonstick skillet over medium heat. Add the seasoned beef mixture and cook, breaking it apart with a spatula, until browned and cooked through, about 6 to 8 minutes. Remove from heat and let rest for a few minutes.
- Prep Your Veggies: While the beef cooks, wash and chop mixed greens, quarter cherry tomatoes, thinly slice red onions, and cut pickles into bite-sized pieces.
- Assemble the Burger Bowls: Start by layering mixed greens at the bottom of each bowl. Top with cooked beef, then evenly add tomatoes, onions, and pickles. Sprinkle shredded plant-based cheese on top so it melts slightly from the warm beef.
- Finish with Dressing: In a small bowl, whisk together apple cider vinegar, olive oil, salt, and black pepper. Drizzle the dressing generously over assembled bowls just before serving for a bright, tangy finish.
Notes
- Use fresh, seasonal vegetables to enhance flavor and natural sweetness.
- Do not over-mix the beef to keep it tender and prevent density.
- Warm the plant-based cheese slightly to melt it beautifully.
- Prepare the dressing last minute to keep greens crisp and fresh.
- Let the cooked beef rest off heat for extra juiciness before assembling.
