Instructions

  1. Prepare the Chicken and Bacon: Cook the smoked turkey bacon in a skillet over medium heat until crispy. Remove and set aside. Season the chicken breasts with salt, pepper, and dried oregano. In the same skillet, sear the chicken breasts on both sides until golden brown but not fully cooked through. Remove from heat and set aside.
  2. Sauté Vegetables and Make Sauce: In the same skillet, add a little olive oil if needed and sauté the minced garlic and sun-dried tomatoes until fragrant, about 1-2 minutes. Add fresh spinach and cook until wilted. Pour in the vegetable broth and plant-based cream, followed by apple cider vinegar. Whisk the mixture together and sprinkle in the natural gelling agent. Simmer gently, stirring frequently, until the sauce thickens slightly.
  3. Assemble the Casserole: Preheat the oven to 375°F (190°C). In a baking dish, arrange the seared chicken breasts evenly. Pour the creamy sauce over the chicken, then scatter pieces of crispy smoked turkey bacon on top. Sprinkle with shredded plant-based cheese and fresh basil leaves.
