Ingredients

Scale

Pasta and Meatballs

  • 12 oz spaghetti (or preferred pasta shape, whole wheat or gluten-free if desired)
  • 8 oz smoked turkey bacon, cooked and chopped
  • 1 lb meatballs (homemade ground turkey or beef or vegetarian meatballs)

Sauce

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 24 oz tomato sauce (natural) or fresh tomatoes simmered with herbs
  • 1 tablespoon apple cider vinegar (natural)
  • 1 teaspoon natural gelling agent
  • Fresh basil leaves, chopped
  • Dried oregano
  • Black pepper, to taste

Cheese and Garnishes

  • 2 cups plant-based cheese, shredded (plant-based), divided
  • Fresh parsley or basil for garnish

Instructions

  1. Prepare the pasta and meatballs: Boil the spaghetti in salted water according to package instructions until al dente. While the pasta cooks, crisp the smoked turkey bacon in a pan and chop it into bite-sized pieces. If making meatballs from scratch, mix ground turkey or beef with aromatic herbs, then bake or pan-fry until golden and fully cooked.
  2. Make the sauce: Heat olive oil in a large skillet over medium heat. Sauté the finely chopped onion and minced garlic until fragrant and translucent. Add the tomato sauce (natural), splash in apple cider vinegar (natural), and sprinkle the natural gelling agent. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and develops rich flavor. Season with fresh basil, oregano, and black pepper.
  3. Combine everything: Drain the cooked spaghetti and gently mix it into the sauce along with the cooked meatballs and chopped smoked turkey bacon. Fold in most of the plant-based cheese (plant-based), reserving some for the topping. Stir carefully to combine all ingredients well.
  4. Bake to perfection: Transfer the spaghetti and meatball mixture into a greased baking dish. Evenly sprinkle the remaining plant-based cheese over the top. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until the cheese is bubbly and lightly golden.
  5. Let it rest and serve: Allow the casserole to sit for 5 minutes after baking to set for cleaner slicing. Garnish with freshly chopped parsley or basil before serving. Enjoy warm with your favorite side dishes.

Notes

  • Avoid overcooking spaghetti to keep it firm after baking.
  • Drain meatballs on paper towels to reduce excess moisture for a thicker casserole.
  • Sauté garlic and onions gently to build deeper flavor in the sauce.
  • Add fresh herbs at the end of cooking to preserve bright flavors.
  • Rest casserole before slicing for better texture and presentation.
