- 1 cup warm coconut milk (natural) (about 110°F / 43°C)
- 2 tbsp vegetable oil
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tsp apple cider vinegar (natural)

- Optional: sugar glaze made from grape juice (natural) and coconut sugar (natural)
Instructions
- Prepare the Dough: Activate the yeast by dissolving it in warm coconut milk combined with a little sugar. Let it sit for 5-7 minutes until bubbly and fragrant.
- Mix the Ingredients: In a large bowl, combine the all-purpose flour, ube powder or mashed ube, salt, sugar, and natural gelling agent if using. Add the yeast mixture, vegetable oil, apple cider vinegar, and vegetarian Worcestershire sauce. Mix until a soft dough forms.
- Knead the Dough: Knead the dough on a floured surface for about 10 minutes until smooth and elastic. If sticky, lightly dust with flour without overdoing it.
- First Rise: Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
- Shape the Rolls: Punch down the dough gently and divide into equal portions. Shape each into round or oval buns and arrange on a lined baking tray.
- Second Rise: Cover the shaped rolls lightly and let them rise again for 30-45 minutes until slightly puffy.
- Bake to Perfection: Preheat oven to 350°F (175°C). Lightly brush the tops with vegetable oil or a sugar glaze made from grape juice and coconut sugar. Bake for 18-22 minutes until cooked through and lightly golden on top.
