Mashed Potato Topping

  • 2 lbs potatoes (Russet or Yukon Gold), peeled and chopped
  • 3 tbsp plant-based butter
  • 1/2 cup plant-based milk, warmed
  • 1/4 cup plant-based cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Mashed Potatoes: Peel and chop the potatoes evenly. Boil them in salted water until fork-tender, then drain well. Mash the potatoes adding plant-based butter, warm plant-based milk, plant-based cream, salt, and pepper until smooth and fluffy. Set aside.
  2. Cook the Filling: In a large skillet, cook the diced smoked turkey bacon over medium heat until slightly crispy. Remove some excess fat if necessary. Add diced onions, carrots, and garlic and sauté until softened and fragrant. Add chopped mushrooms and cook until moisture evaporates.
  3. Build the Flavor Base: Stir in vegetarian Worcestershire sauce (natural), tomato paste (natural), and apple cider vinegar. Pour in vegetable broth and sprinkle in natural gelling agent. Simmer until the filling thickens to a rich and saucy consistency. Season with salt, pepper, fresh thyme, and parsley.
  4. Assemble and Bake: Transfer the filling into a baking dish, spreading evenly. Dollop or spread the creamy mashed potatoes on top, creating gentle peaks with a fork if desired. Bake at 375°F (190°C) for 25-30 minutes, or until the topping turns golden and slightly crispy around the edges.
