Description

Creamy Marry Me Tofu with Sun-Dried Tomatoes is an indulgent yet vibrant plant-based dish featuring tender tofu cubes enveloped in a luscious, savory sauce made with sun-dried tomatoes, plant-based cream, and fragrant herbs. This quick and easy recipe offers a comforting, protein-packed meal perfect for cozy dinners or impressing guests with minimal effort.

Ingredients

Scale

Tofu and Sauce

  • 400g firm tofu, drained and cubed
  • 100g sun-dried tomatoes, finely chopped
  • 1 cup plant-based cream
  • 3 garlic cloves, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp natural gelling agent
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Smoky Protein Addition

  • 100g smoked turkey bacon, sliced

Fresh Herbs and Garnishes

  • 1/4 cup fresh basil, chopped
  • Extra basil leaves for garnish
  • Extra sun-dried tomato slices for garnish

Instructions

  1. Prepare the tofu and sun-dried tomatoes: Drain the firm tofu and pat it dry, then cut it into bite-sized cubes. Chop the sun-dried tomatoes finely so that they release their rich flavor into the sauce evenly.
  2. Cook the smoked turkey bacon: In a large skillet, heat a drizzle of olive oil and cook the smoked turkey bacon until crisp. Once done, remove and set aside, leaving the flavorful oil in the pan for the next step.
  3. Sauté the garlic and create the sauce base: Add minced garlic to the skillet and sauté until fragrant, about 30 seconds to a minute. Then stir in the sun-dried tomatoes and vegetarian Worcestershire sauce (natural) to build a savory base.
  4. Stir in plant-based cream and natural gelling agent: Pour in the plant-based cream and sprinkle the natural gelling agent evenly across the sauce. Stir consistently to thicken the mixture, aiming for a luscious, smooth consistency that clings to the tofu.
  5. Add tofu and smoked turkey bacon: Gently fold the tofu cubes and cooked smoked turkey bacon back into the sauce, warming everything through. Season carefully with salt and pepper, then add chopped fresh basil.
  6. Final simmer and plating: Let the dish simmer on low for a few minutes to allow flavors to meld beautifully. Serve warm, garnished with extra basil leaves or a sprinkle of smoked turkey slices for added texture.

Notes

  • Pat tofu dry to help absorb the sauce better and prevent sogginess.
  • Use quality sun-dried tomatoes for intense flavor.
  • Adjust the amount of natural gelling agent to control sauce thickness.
  • Simmer on low heat to harmonize flavors without curdling the cream base.
  • Add fresh herbs like basil right before serving to keep their vibrancy.
