Easy to prepare and full of rich, smoky, and earthy flavors, it serves as a perfect meal for family dinners or casual gatherings, delivering warmth and satisfaction in every bite.

Ingredients

Scale

Protein

  • 2 large chicken breasts, cut into bite-sized cubes
  • 4 slices smoked turkey bacon, chopped

Vegetables and Aromatics

  • 8 oz fresh mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Dairy and Sauces

  • 1 cup plant-based cheese, shredded
  • 2 tbsp vegetarian Worcestershire sauce (natural)

Liquids and Thickeners

  • 1 1/2 cups chicken broth
  • 2 tbsp all-purpose flour

Oils and Seasonings

  • 2 tbsp olive oil
  • 1 pinch natural gelling agent
  • Fresh herbs (parsley, thyme, or rosemary), chopped, for garnish

Instructions

  1. Prepare the Ingredients: Slice the mushrooms, dice the onion, and mince the garlic. Cut the chicken breasts into bite-sized cubes. Chop the smoked turkey bacon into small pieces to crisp perfectly during cooking.
  2. Cook the Bacon and Vegetables: Heat olive oil in a large skillet over medium heat. Add the smoked turkey bacon and cook until crisp. Remove and set aside. In the same pan, sauté the onion and garlic until soft and fragrant. Add the mushrooms and cook until golden brown.
  3. Brown the Chicken: Add the cubed chicken to the skillet with the vegetables. Cook until the chicken is lightly golden on all sides but not fully cooked through.
  4. Make the Creamy Sauce: Sprinkle flour over the chicken and vegetables, stirring well to combine. Gradually pour in the chicken broth while stirring constantly until the mixture thickens. Add vegetarian Worcestershire sauce (natural) and plant-based cheese, allowing the cheese to melt and form a smooth, creamy sauce. Stir in a pinch of natural gelling agent to help set the casserole.
  5. Assemble and Bake: Transfer the mixture into a baking dish. Sprinkle the crispy smoked turkey bacon evenly over the top. Bake in a preheated oven at 375°F (190°C) for 25 to 30 minutes, until bubbly and golden on top.

Notes

  • Use fresh mushrooms for better texture and flavor compared to canned or dried varieties.
  • Don’t overcook the chicken upfront; browning without full cooking keeps the meat juicy after baking.
  • Layer flavors thoughtfully by cooking bacon and vegetables separately to preserve unique textures and tastes.
  • Add broth gradually when making the sauce to reach perfect creamy consistency without it being too runny.
  • Allow the casserole to rest slightly after baking so the sauce sets perfectly.
