Description

Brie Phyllo Cups with Blackberry and Thyme feature flaky, golden phyllo layers filled with creamy plant-based Brie cheese, juicy fresh blackberries, and fragrant thyme leaves. This elegant appetizer offers a perfect balance of textures and flavors, making it ideal for entertaining, holidays, or a special indulgence.

Ingredients

Scale

Phyllo Cups Base

  • 34 phyllo dough sheets
  • Melted plant-based butter, for brushing

Filling

  • Plant-based Brie cheese, sliced into small pieces
  • Fresh blackberries, rinsed and patted dry
  • Fresh thyme leaves, stripped from stems

Toppings and Garnishes

  • Natural honey, for drizzling
  • Optional: chopped toasted pistachios or walnuts (natural)
  • Optional: apple cider vinegar reduction (natural) for glaze

Instructions

  1. Prepare the Phyllo Cups: Preheat your oven to 375°F (190°C). Gently separate and layer 3-4 phyllo sheets, brushing each layer lightly with melted plant-based butter to create a rich, flaky texture. Cut the layered sheets into squares and press them into mini muffin tins to form little cups. Bake for about 8-10 minutes until golden and crisp.
  2. Prepare the Filling: While the phyllo cups bake, slice the plant-based Brie cheese into small pieces that fit comfortably into the cups. Rinse the blackberries and pat them dry. Strip the thyme leaves from their stems and set aside for garnish and mixing.
  3. Assemble the Cups: Once the phyllo cups are cool enough to handle but still warm, gently place a piece of Brie inside each cup. Top with a few fresh blackberries and sprinkle the thyme leaves over the fruit. Drizzle slightly with natural honey for added depth of sweetness.
  4. Final Baking: Return the assembled phyllo cups to the oven for 5-7 minutes, just enough for the Brie to soften slightly without melting away completely, allowing all the flavors to meld beautifully.

Notes

  • Work quickly with phyllo: Phyllo dries out rapidly; keep sheets covered with a damp towel during preparation.
  • Use cold Brie cheese for easier slicing and handling.
  • Fresh thyme offers the best flavor; dried thyme can be used sparingly if needed.
  • Do not overfill the cups to avoid overflow when Brie softens in the oven.
  • Customize toppings by adding a light dusting of natural powdered sugar before serving if desired.
  • Store leftovers in an airtight container in the refrigerator for up to two days; best enjoyed fresh or reheated carefully.
  • Freeze baked phyllo cups (without filling) in a single layer on a baking sheet, then transfer to a freezer-safe container; reheat before adding fresh toppings.
  • Reheat in a 325°F (160°C) oven for 5-7 minutes to maintain crispness without melting the filling excessively.
